What is the Mark of Quality Differentiated Cueva?

It is a recognition as a figure of Food Quality of Castilla la Mancha, which has been awarded by the Ministry of Agriculture of Castilla-La Mancha and the European Union.

Guarantee stamp “Cueva” is used to recognize in the market the sparkling wines with Quality Certification, elaborated by the traditional method by the wineries of Villanueva de Alcardete (Toledo), grouping all together under the collective mark Cueva.

Foundation year

On December 22, 2009, the Ministry of Agriculture and Rural Development of Castilla La-Mancha recognizes the Mark of Quality Certification “Cueva” as a figure of Food Quality.

Group the wineries of Villanueva de Alcardete under this collective mark Cueva, aims to achieve maximum cohesion among the wineries that are dedicated to the manufacture of sparkling wines by the traditional method of second fermentation in the bottle, in order to ensure the process processing in accordance with the standards established and ensure the optimum product quality.

Background

Quality control and tasting committee

Sparkling wines of the collective mark Cueva are classified as such by a Tasting Committee, which verifies that the following conditions are met:

– Appearance: fine and persistent bubble. pale gold color, which in the case of Reserves derive to darker brown.
– Nose: Clean aromas and fruit, which are intensified in the Reserves.
– Taste: Balanced, structured and easily in the mouth.
The wines bases, produced by controlled fermentation, must have the following enological characteristics:

– Minimum natural alcoholic strength of 10% vol.
– Acidity Total > 5 g/l expressed as tartaric acid.
– pH 3.00 to 3.30
– Volatile acidity <0.5 g/l expressed in acetic acid.
– Sulphur dioxide <90 mg/l

The base wines

The base wines are made exclusively from grapes of excellent quality approved varieties, whose analytical parameters meet the above limits. Mixtures may be used in different percentages, both varieties and vintages. The enforcement of the “specification” of the Quality Mark Differentiated Cueva, is assigned to a external control entity food quality to the associated wineries, so proving sufficient capacity to perform verification processes production, processing and marketing, as well as the physicochemical and organoleptic characteristics which define specific shape so particular sparkling wines made by the traditional method of second fermentation in the bottle.

Labeled

Guarantee stamp “Cueva” must appear clearly differentiated in the primary packaging of each unit of product sales, either on the label (front label or back) or in direct printing, must appear in a visible place with its own characteristics graphic identity.

Dimensions: 15 mm wide by 5 mm high.
These dimensions will make the minimum reproduction in which can be printed in the main labeling and use the logo, to divulge and promote the Mark Quality Certification.
